Hingu (Ferula narthex Boiss) is one of the aromatic spice that belong to UMBELLIFERAE family. It is a 8-9 foot perennial herb with soft and perfuse branches. Hing or Asafoetida has small and yellow coloured flowers present at the twigs or branches. By making a cut over branches or roots, gum or resin is secreted from it like the tears coming from it. Fresh tears are tough but when dried they become hard and brittle . These tears are internally milky whitish yellow, translucent or opaque. Hingu is mainly found in Afghanistan, Punjab, Jammu and Kashmir.
It works as flavouring agent for curries, sauces, pickles & in veterinary medicine also.
